Cheap, Tasty, Easy Soup!

 

I know I'm always posting soup recipes, but they're just so easy to make and I love how you can use so many different great ingredients in them. 

For busy parents, soup is a great way to get veggies and good stuff in your kids without them knowing ;)

I was searching for a sweet potato soup recipe yesterday and ended up making a concoction of my own.  And it was great.

Why should we wait for Thanksgiving to enjoy sweet potatoes?? They should be a staple in our diets every day!

 

Sweet Potato Soup (Gluten free, Vegan)

 

What you need:

3 cups of peeled, diced sweet potatoes

3 cups water

1/4 can coconut milk or about 1/2 cup

1/2 to 1 tbsp. ginger peeled and finely diced (optional)

2 tbsp. white sugar or brown sugar (I used white)

1 tbsp. honey or agave nectar (optional)

1/2 tsp salt

 

Instructions:

Bring water to a boil and boil the potatoes and ginger for about 20-30 minutes.

Add the potato mixture to a blender with all other ingredients and blend.

***Ginger is a very strong flavor so if you don't use it, the soup should still be tasty.  I like it though.  If you're not used to it, maybe start with only 1/2 tbsp and go from there. 

***You can also use as little or as much coconut milk as you like.  I used about 1/2 cup.  Has to be from the can though.
